Equipment

  • Large pot

Ingredients

  • 1 package of andouille sausage
  • 2 cans red kidney beans rinsed & drained
  • 1 onion diced
  • 1 bell pepper diced
  • 1 celery stick diced
  • 4 cloves garlic minced
  • 6 cups broth
  • 4 bay leaves
  • 2 tbsp cajun seasoning

Instructions

  • In a large pot, cook sausage over medium heat until browned. Remove and set aside.
  • In the same pot, add onion, bell pepper and celery. Cook 5-7 minutes or until soft. Add garlic and cook for another minute.
  • Stir in the drained beans, bay leaves, cajun seasoning, cooked sausage and broth.
  • Bring to a boil, then reduce to a low simmer. Cover and cook for 1.5-2 hours, stirring occasionally. Tip: the longer it cooks, the better it gets.
  • Serve over warm rice.
