Cajun Red Beans & Rice
A slow-simmered Louisiana favorite.

- Large pot
Ingredients
- 1 package of andouille sausage
- 2 cans red kidney beans rinsed & drained
- 1 onion diced
- 1 bell pepper diced
- 1 celery stick diced
- 4 cloves garlic minced
- 6 cups broth
- 4 bay leaves
- 2 tbsp cajun seasoning
Instructions
- In a large pot, cook sausage over medium heat until browned. Remove and set aside.
- In the same pot, add onion, bell pepper and celery. Cook 5-7 minutes or until soft. Add garlic and cook for another minute.
- Stir in the drained beans, bay leaves, cajun seasoning, cooked sausage and broth.
- Bring to a boil, then reduce to a low simmer. Cover and cook for 1.5-2 hours, stirring occasionally. Tip: the longer it cooks, the better it gets.
- Serve over warm rice.
