In a large pot, cook sausage over medium heat until browned. Remove and set aside.
In the same pot, add onion, bell pepper and celery. Cook 5-7 minutes or until soft. Add garlic and cook for another minute.
Stir in the drained beans, bay leaves, cajun seasoning, cooked sausage and broth.
Bring to a boil, then reduce to a low simmer. Cover and cook for 1.5-2 hours, stirring occasionally. Tip: the longer it cooks, the better it gets.
Serve over warm rice.
